The soil came first

Before any of this he built his own living soil and grew San Marzano tomatoes from Italian seed for a restaurant in Georgetown. Same instinct, different plant: you don't fix a plant later, you get the ground right first.

Then the kitchen

Twenty years cooking professionally, plus summers in Morocco, Spain, France, Greece and Italy. Every formula on this site began as a recipe and was developed the way recipes are — made, tasted, adjusted, made again.

Then the paperwork

Same written procedure every time, batches small enough that one person tastes them, and an independent lab standing between us and you. If a batch doesn't come back right, it doesn't go out.
